French Onion Soup

It’s damn cold today!!! My hands just don’t want to warm up, and I am not all that busy, so my whole body is getting cold…that’s why I thought I would give you a recipe for a yummy soup, which I absolutely love!!!

French Onion Soup

3 tbs unsalted butter
8 large yellow onions, halved and cut pole to pole
5 cups water
½ cup sherry
4 cups chicken broth
2 cups beef broth
6 sprigs of fresh thyme
2 bay leaves
Black ground pepper to taste
Salt to taste

Heat oven to 180 degrees C
Spray a large over tray with cook & spray
Place butter, onions and 1 tsp salt in tray, cover with tinfoil and cook for about 45 mins to an hour. After an hour, remove from oven, and scrap the sides and bottom, cut slits into the tinfoil and put onions back into oven. Cook until very soft and golden brown – about another hour.
Carefully remove onions from oven, and transfer onions into large soup pot, place on medium to high heat until liquid evaporates and onions are brown. Cook until the bottom of pot has a dark crust (careful do not burn it! Reduce the heat if you are afraid of burning the onions)
Stir in 1 cup of water, scraping the bottom of the pot, until water evaporates, repeat deglazing process 2 more times.
Your onions will be a beautiful glistering golden brown color
Stir in the sherry, cook and stir until all liquid evaporates.
Stir in the chicken broth and beef broth, plus 2 cups of water, the thyme and bay leaves and add ½ tsp of salt.
Increase heat to high and bring to a simmer.
Reduce heat to low and simmer for 30 mins.
Remove the herbs, season with salt and pepper

To spice it up a little, place soup in bowl, place a slice of baguette and cover with shredded mozzarella, place in oven until cheese has melted.

Sorry, no picture as I have not done this soup in a while…but I am craving it, so maybe I will make some tonight!
