Malay Chicken Curry

You will need

Rice
Chicken – cubed
Onions – cut pole to pole
Garlic – crushed
Potatoes – peeled 7 cubed
Oil
1 tsp Brown sugar
2 tsp Borrie
1 ½ tsp Medium curry powder
1 ½ tsp Masala
Coconut milk
Rice into pot, let it boil up – salt after you have rinsed
Heat oil
Add onions and garlic and fry until onions are opaque
Add chicken, brown
Add spices and sugar
Add potatoes
Simmer for 10 mins
Once chicken is cooked, add coconut milk and salt to taste
Simmer for 5 mins, thicken sauce if required

I love a quick dish like this, and the nice thing is if you like it stronger (like I do) you just add a little more curry powder and masala. You can also cut up some green chillies if you want to go that route. I like to serve it with banana and chutney, but you can go all out and make sambles and rita. I keep this one simple for a great home meal.
