Chicken Tikka Masala

This is a lot of hard work, but you get such an amazing dish in the end, I just had to share it with everyone!

Chicken Tikka Masala


(leave to marinade over night in fidge)

Fresh yogurt (non sour)

Chopped coriander leaves

Ginger paste

Garlic paste

Garam masala

Dry red chillies

Lemon juice

Orange food coloring



Fresh garlic


Fresh tomatoes, chopped fine

Garam masala

Brown sugar

Single cream

Almonds blanch & grounded to a paste



Grind coriander, and all other marinade ingredients (no yogurt) into a smooth paste

Pour paste into yogurt

Add chicken

24 hour marinade

Skewer chicken

Grill chicken until browned but still very tender

Heat oil

Add onions, cook until soft

Add cardamom and garlic

Add garam masala, brown sugar, tomatoes and almonds – combine well – cook till the tomatoes are soft and a thick paste is formed

Add grilled chicken

Add cream

Now to get a really restaurant kinda taste to this dish, make a pocket from tinfoil and place ontop of dish. Place a piece of coal in the tinfoil and cover pot, keep covered for about 5 – 10 minutes.
