So I made a cous cous salad…my way…
black pepper feta
rocket, roughly chopped
fresh oregano, roughly chopped
Add the apricot jam to the cous cous water, make as per instructions on box and leave to cool.
Roast the chicken with some herbs, garlic and olive oil, leave to cool.
Mix all the salad things together, add to cous cous.
Top with chicken, and some more feta and the grapes.
I drizzled some creamy garlic salad dressing on top, but this is optional.
You can leave the chicken off (which would be my choice but MC likes his meat). I even got around to taking a photo before it was attacked!
