Pea & Ham Soup

Chicken Stock
Onion
Garlic
Frozen Peas
Thyme (fresh)
Butter
Sandwich Ham
Eisbine
Pancetta
Salt & Pepper
Fresh Cream

Fry the onions in the butter until translucent, add garlic, fry quickly to release the flavor, but do not overcook the garlic, add the stock and bring to a boil, and add sprigs of thyme into the boiling stock.

Add peas and bring to a boil. Remove thyme and add ham. At this point I also add some meat from an Eisbine. Remove the pot from the heat using a stick blender, blend the mixture. I like to have some texture to my soup, so I do not make it to smooth. But that’s all a personal choice. Season to taste.

When serving, cut up the pancetta, fry lightly and place into bowl of soup. Take some fresh cream and just drizzle over lightly, with a few croutons…and you have the perfect pea and ham soup! Serve with freshly baked cibatta and you have the perfect meal for rainy days!
