Chocolate Sugar Cookies

4 cups self raising flour
4 tsp cocoa powder
1 teaspoon baking soda
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract

Preheat oven to 180 C.

In a small bowl, stir together flour, baking soda, and cocoa powder. Set aside.

Cream together the butter and sugar until smooth, then beat in egg and vanilla until a light lemon yellow colour is formed.

Bit by bit blend in the dry ingredients. One all the dry ingredients are blended in, you will have crumb consistency. Don’t worry! It’s suppose to look like that.

Roll rounded teaspoonfuls of dough into balls, and place onto cookie sheets that have been covered with grease proof paper

Bake 8 to 10 minutes in the preheated oven, or until golden. (depending on your oven)

Let stand for a bit before moving to a cooling rack.
